The 1:16 Pour-Over, Step by Step
The ratio we use on the bar, and the two adjustments that fix almost every cup.

Weigh 22 grams of coffee and 350 grams of water just off the boil. Grind about as fine as table salt.
Bloom first
Pour 50 grams of water, wait 40 seconds, then pour the rest in slow circles. You're aiming to finish draining by three and a half minutes.
If it tastes sour or bitter
Sour means grind finer. Bitter or dry means grind coarser. Change one thing at a time.
